Turkey & Zucchini Hash with Garlic Yogurt Sauce

This earthy hash is a delicious, protein-packed breakfast that’s as nourishing as it is simple to make. Ground turkey provides a lean source of protein, while the sautéed zucchini, bell pepper, and red onion add a boost of vitamins and fiber. The creamy garlic yogurt sauce brings a tangy finish that complements the warm spices perfectly. This is a fantastic option for a healthy, balanced breakfast that’s quick enough for busy mornings yet hearty enough to keep you satisfied!

Ingredients4 servings

  • Hash: 
  • 12 oz ground turkey
  • 2 medium zucchini, washed and grated
  • 1 red bell pepper, diced
  • 1 small red onion, diced
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp dried oregano (use ½ tsp if using fresh oregano)
  • ½ tsp salt 
  • Garnish: chopped parsley
  • Optional: sourdough toast
  • Garlic Yogurt Sauce: 
  • ½ cup plain Greek yogurt
  • 1 clove garlic, minced
  • 1 tbsp lemon juice
  • 1 tsp olive oil
  • Salt to taste

Directions

Shred the zucchini. Using a tea towel, squeeze as much water as you can from the zucchini and set aside.

In a small bowl, whisk together the ingredients for the garlic yogurt sauce until smooth. Set aside.

Heat the oil in a large skillet over medium heat. Add ground turkey and cook until browned for about 8-10 minutes. Drain any liquid from the pan. Season with ½ tsp of salt and oregano and stir.

In the same skillet with the ground turkey, add the zucchini, red onion and bell pepper. Sauté until softened, about 3-5 minutes. Turn off the heat and serve the hash mixture with a side of the garlic yogurt sauce. 

Note: Experiment with fresh herbs such as thyme or rosemary or spices such as cumin for extra warmth.

    Wonderful and easy dish! I doubled the oregano and also added pepper and cumin. Served the yogurt sauce on top of the hash. Roasted butter squash and sweet potatoes to serve with the turkey hash. A big hit with the family! Highly recommend!
